Brie & Raspberries Appetizer Recipe

I have been craving Brie lately, ever since we were at Extraordinary Desserts a few weeks ago. I just had to have me some. So, while I was out at Target I picked some up. I like to make things fancy every once in a while and I am always on the look out for the next great recipe to serve at a party, or when I'm having people over. I love things easy and delicious, but who doesn't? Especially if its a hit. So I melted the Brie in the microwave for like 12 seconds, just enough to soften it. Sliced up a baguette of  French bread and toasted it in the broiler, spread the cheese on each slice and threw a couple raspberries on top, because I was feeling adventurous, and drizzled honey over the whole shebang.

Holy Hannah! This was amazing and by far exceeded my expectations. I thought it might be kinda good, but it was fantastic! The bread was warm and the brie buttery, the raspberry flavor was just sweet enough with a touch of tartness. It all came together with the honey though. The honey is a must and I couldnt get enough. I imagine it would be even more delicious with raw organic honey. Raw organic honey is super delicious! You can get it at most health food stores and sometimes local farmers markets. It is a little more expensive than what you would expect for honey, but its worth it!! Also, Im sure most other berries and some fruits would be a great match for this as well.

Hope you try it! Got a favorite cheese recipe? Id love to hear it!

  1. Caprese salad. Stack sliced tomatoes, sliced soft mozzarella, and lots of basil, then drizzle with olive oil and balsamic vinegar, salt and pepper.

Anything with soft mozzarella. The other day I at a whole ball of it like an apple. Not embarrassed at all.
